LENTIL SOUP
2 Tbs. oil
2 celery stalks, chopped
2 cups soy sausage or prosage,
2 carrots, chopped cut into cubes
1 cup green lentils
1 onion, chopped
6 cups vegetable stock
2 cloves garlic, minced
2 Tbs. garam masala
Heat oil in a soup pot over medium heat. Brown soy sausage
or prosage in oil then remove and set aside. Add onion
to the pot and sauté until translucent. Add garlic
and sauté for 2 minutes. Add celery & carrots
and sauté until celery is soft. Add lentils and
stir for 2 minutes. Next add vegetable stock and garam
masala and bring to a boil. Reduce heat to medium-low
and simmer for 25-30 minutes. Check lentils for doneness,
they should be soft but not mushy. Stir in browned soy
sausage when lentils are done. Season to taste with
salt and pepper.
Makes 4 servings.
